Here is one of my faves:
Tomato Basil Soup
1 large (32oz) can of plain crushed tomatoes (without the seasonings already added)
2 (16 oz) cans chicken stock (may use vegetable stock for completely vegetarian)
1 cup heavy cream
salt and pepper to taste
2 tsp of dried basil
handful of fresh basil
Bring the tomatoes and stock to a boil. Slowly whisk in heavy cream and dried basil and bring to a gentle boil. Lower heat and simmer for 5 minutes. Add salt and pepper to your liking and serve. Cut the fresh basil into ribbons and sprinkle on top for garnish.
We always make it and serve it with grilled paninis as kind of a "grown up" tomato soup and grilled cheese meal!
