
Squash Soup
6 zucchini squash - peeled, diced in large chunks
1 large onion - chopped
1 1/2 tsp curry powder
3 cups chicken broth or stock
1 cup heavy cream
1/2 cup milk
salt and pepper to taste
Cook squash and onions until tender and transluscent. Add salt, pepper and curry. Place in a blender with half of the broth/stock. Blend until smooth, then add rest of the broth/stock, milk and cream. Then, return to pot and cook until hot, but do NOT boil (only a simmer)!
